Blog #94: Deluxe Vegan Nachos Recipe

You can make the best nachos you have ever had at home! It’s great to be in control of the ingredients and you know what you’re eating.

This was actually my first time ever making nachos and I was very happy with how well it turned out. I had originally made these nachos for myself not intending to do anything else with it other than enjoy them myself, lol. But the recipe turned out so unexpectedly well that I had to share it with you all!

Ingredients:

  • 1 bag of tortilla chips
  • 1/2 cup sliced black olives
  • 1/2 cup sliced jalapenos
  • 1/4 cup finely chopped onion
  • 1 cup salsa
  • 1 cup bell pepper (cut into small cubes)
  • 1 package vegan protein source (pick any one: Beyond Meat, lentils, tofu, Lightlife or even vegan sausage mashed up into ground round)
  • 1/4 cup cilantro
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • Taco seasoning (or make your own)
  • 5-6 Daiya vegan cheddar slices
  • 3 TBSP non-dairy milk
  • 2 TBSP Daiya plain yogurt

Method:

Finely chop onions, bell pepper, and cilantro. Set them aside in separate containers. Set the sliced jalapenos and sliced olives aside separately as well.

Vegan Protein Topping: Cook your chosen vegan protein (tofu, lentils, beyond meat, lightlife, etc, etc) with the cilantro, V8 and taco seasoning until everything has melded together. Feel free to add some minced garlic if you wish.

Vegan nacho cheese sauce: In a saucepan on low, add the cheese slices (Pro tip: The slices taste better than the shreds). Start stirring to help the slices melt. Then add the non-dairy milk. The add the Daiya plain yogurt, onion powder, garlic powder and smoked paprika.

Nachos Assembly: On a plate spread out the tortilla chips. Then start to layer the toppings: Add a tablespoon of the taco seasoned protein topping. Then sprinkle some bell pepper, chopped onion, black olive slices, and jalapeno slices on top as the next layer. Next, drizzle the vegan nacho cheese on and then finish off with nice tablespoon of salsa on top.

You should be able to make at least 4 servings
