T’is the season for pumpkin spice and everything nice! π πΒ π.Β I was really craving a good muffin recently and I decided to go pumpkin spice with it.
This recipe is simple, gluten-free, food allergy friendly and vegan.Β I used the Enjoy life brand muffin mix (https://enjoylifefoods.com/our-food/baking-mixes/muffin-mix/), then I added my own additional ingredients to make it ‘pumpkin spice’.

Here’s the additional pumpkin spice ingredients you’ll need on top of what’s already written on the box to create the standard muffin batter:
(**On the box, the 2 ingredients to add to the standard muffin mix are: 1 cup cold water and 1/4 cup of oil.** In this case, I reduced the oil by half [so only pour HALF of a 1/4 cup of oil] because pumpkin pure is being added to the recipe.Β Even a little too much liquid ingredients ruins gluten-free baking especially).

Pumpkin Spice Ingredients:
– 3 TBSP pumpkin puree (non-level scoops)
– 1 tsp vanilla extract
– 1 tsp ground cinnamon
– 1/8 tsp ground cloves
– 1/2 tsp nutmeg
– 1 tsp finely grated fresh ginger (non-level scoop)

Method:
Add the dry spices to the dry mix.Β Then, as per normal baking procedure, gradually mix wet ingredients into the dry ingredients starting with the cold water and oil.Β Then add the pumpkin puree, finely grated ginger and vanilla extract. Mix until ingredients are combined (approximately 13 stirs), but do not over mix. Line muffin tins with parchment paper cups, fill each cup until 1/2 full.Β Bake at 350Β°F for 15 – 20 mins.
