I love pancakes! 🥞 😍 I really do. Don’t you? You can eat them any time of day and they usually taste so good! BUT, when gluten is a strong enough health issue and you must sustain a gluten-free diet, your food options dramatically decrease. Great tasting gluten-free (and vegan) pancakes end up on your plate only once in a blue moon if you’re lucky. It’s no secret that gluten-free baking is very challenging and finding good gluten-free food (healthy + tastes good) especially at first isn’t always easy.
I’ve gotta say that the ‘Enjoy Life’ brand’s pancake/waffle mix (https://enjoylifefoods.com/our-food/baking-mixes/pancake-waffle-mix/) is definitely one of the best gluten-free mixes on the market. The flour blend is awesome & includes rice, buckwheat, teff, millet, tapioca and sprouted rice protein.
Simply follow the mixing instructions on the box and you’re good to go! I’m SO impressed with this pancake mix because I’ve had a terrible time with gluten-free pancake recipes. They’ve been total disasters, lol! 😂 I’ve literally had experiences where the gluten-free pancakes would NOT even cook! As in, it just stayed as a batter form and whatever stuck to the pan would just burn 🙃😕.
I highly recommend the ‘Enjoy Life’ brand products to anyone with food allergies and intolerances. It’s a fantastic brand! Enjoy life products are also vegan friendly, so that’s definitely big a plus!
